I use the freshest ingredients I can find that are indigenous to Texas and the area. Using local ingredients is the heart and soul of our food and we hope you enjoy eating it as much as we enjoy preparing it for you on a daily basis.� Executive Chef Brian Olenjack utilizes local and regional ingredients preparing them with traditional French style cooking techniques to create the menu at Olenjack's Grille. Featuring specialties such as flash fried antelope ribs with jalapeno jelly, pecan-crusted trout with pancetta, arugula and Texas honey butter or beef tenderloin with wild mushroom hash and tomato hollandaise, the menu encompasses foods for which Olenjack has become known. Foods are prepared fresh daily and we use only the freshest and finest ingredients available. Brian drew on his knowledge of wine to create a wine list perfectly matched to the food at Olenjack's.
