The contemporary American cuisine is thoughtfully developed by Chef William Alexander, whose previous work includes the Dining Room at Kendall College & New Orleans hotspots Emeril's & Commander's Place. The menu now focuses on local ingredients and sustainable sources, creating American bistro fare with subtle southern influences.
Appetizers include short-rib ravioli w/ house-made ricotta, crab cakes w/ remoulade & endive marmalade, dirty rice'd roasted duck gumbo, and sliced pancetta-abetted diver scallops. Upstairs, the raw bar serves East & West Coast oysters along with Republic's renowned maki rolls.

Chicago - River North
Since 1994, Mambo Grill has been considered one of Chicago's best and most beloved restaurants, with reasonably priced Latin cuisine, noteworthy authentic cocktails and spirits served in a homey environment.
The restaurant, established in the River North neighborhood, has an intimate and welcoming feel. The lively interior is both energetic and upbeat. The walls are painted a rich, buttery yellow. Authentic black and white Cuban photographs hang over the spacious wooden booths and along the walls. The high ceilings are boldly painted to resemble something of a backgammon board. Energetic music, from Latin Jazz to Brazilian Samba, plays throughout. During warmer days, French doors open up to the outdoor sidewalk café, which is tropically painted in yellow, teal, maroon and purple hues. Visit Mambo
